Hi Frantisek, Hi Folks,

First of all I apologize for the silence from my side last Saturday.. Is
there another opportunity next Saturday :)?

Regarding the crowdsourcing campaign: Yes I am interested in organizing
something.. Any additional info about how you would like that to unfold?
About that I thought I would go talk to someone tomorrow: there is an
organization here that helps with small courses and information evenings
which could be interesting for a probiotics intro of some kind with some
tasting etc.. The only catch is the timing relative to the crowdsourcing
campaign, as it usually takes months to get something done here :) We'll
see and keep our fingers crossed.. Will keep you guys apprised :)

Just thought of something else to throw in the mix on the topic of
doughs and since we are going to have a pizza oven: In Elzass (close by
for me) they have something called Flammekuche: it is like a very thin
pizza, which has cream or cheese instead of tomato sauce and is topped
with lards or veggies or mushrooms

that dough either, but  it seems easy enough to prepare and to freewheel
with; should be able to get some recipes to try them out :)

Btw2: As Frantisek asked: I don't have any experience with sour dough, I
like too but unfortunately I don't tolerate it very well :(
