One thing I've seen work well at maker/hacker events is a crypto challenge,
where attendees have to solve some sort of system puzzle. At one event it took
two days to crack and kept everyone entertained, even those not participating,
because the organizers had betting, progress announcements, etc.
And while it may not fit your description, Cards for Humanity is always fun. ;)
